Solder paste - quick and dirty

I'm trying to finalize a design and in the course of setting up my output files, I found out that none of my padstacks have the solder paste defined.

Is there a quick and dirty way to do this, can I use the mask to create the paste layer?  Then is there a way to exclude through holes, such as mounting holes?  (do vias get paste?)
